These mini quiches can be served hot or cold and can be frozen - so very handy for kids lunch boxes. Children will enjoy making these with you as they can stir the mixture, roll the pastry and make the pastry circles.

quiche

Ingredients

  • 1 pack of ready-made shortcrust pastry, or make your own. Puff pastry will also work.
  • 2 eggs
  • 200 ml milk
  • 50 gram grated cheese
  • pinch of pepper and herbs
  • Your choice of fillings: Whatever you have in the fridge or pantry that your children will eat.

Suggestions: Sweetcorn, spring onions, chopped peppers, bacon, tuna, chopped cooked meat (ham, salami, chicken, chorizo etc) chopped mushroom, frozen peas.....

Method

  1. Preheat your oven to 180 C / Gas 4.
  2. Lightly grease the muffin tray (or bun tin) with butter.
  3. In a jug beat the milk and egg together.
  4. Prepare your fillings if necessary and grate the cheese.
  5. Using a glas or pastry cutter cut circles out of the pastry and place into the muffin cups.
  6. Put some grated cheese in the bottom of each pastry case, then add your fillings.
  7. Pour in the milk & egg mixture until it almost reaches the top of the pastry.
  8. Bake for about 20 minutes at 180 C/Gas 4 or until quiches turn light brown.

Enjoy!
